This model is the exotic among knives. Originally made for the preparation of Japanese dishes, it has long since found its way into international kitchens. A Santoku knife is ideally suited for the preparation of wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with ease.  

Its characteristic feature, apart from the enormous sharpness of a Santoku knife, is its special shape: Unlike European models, the blade is wider than the handle, so that your fingers have more room when cutting. Furthermore, a Santoku knife is often lighter than its comparably large European relatives.

The WASABI Blue Edition knives combine extraordinary beauty and sharpness. The blades have a core of VG10 and are coated with 67 layers of damascus steel. A vacuum heat process is used to harden the blade, which results in a hardness of 60±2 HRC and thus ensures long-term sharpness, as well as fast and uncomplicated working.

The D-shaped handle is ergonomically designed, fits snugly in every hand and ensures comfortable working. The blue wood gives the handle an exclusive look. Together with the elegant mosaic pin, the knife series is an eye-catcher in every kitchen.
