The Master Miyajima is another knife of the WASABI Island Special Collection, which should help you to find a unique and tailor-made knife for yourself. This knife has been designed with great attention to detail to ensure long lasting pleasure in the kitchen.
To provide exceptional sharpness and quality, a vacuum heat treatment process is applied by an experienced Master to wrap Damascus steel around a stable VG10 core. Furthermore an additional water cooling procedure is used to bring the edge of the blade to maximum sharpness. This ensures a cloud pattern as well as long-lasting sharpness with a hardness of 60 ± 2 HRC.
The ergonomic handle is hand polished and mainly made of high quality American desert Ironwood. The knife comes in a gift box with a finely crafted hand-carved Italian stitching, which is made of vegetable tanned leather. It is the ultimate knife that meets all the criteria to work in the kitchen with absolute pleasure.
The chef's knife is the all-rounder among knives: its wide, strong blade glides smoothly through fish and meat and shreds even the hardest vegetables.
